Wash, soak rice for 3 hours. Soak urad dal and fenugreek seeds together in another vessel for 3 hours. Once soaked, drain water completely. First grind urad dal along with methi seeds using ice cold water. Do not add water all together. Add water little by little, running the mixie in short intervals.

Salt to taste. Water as required. Only the above ingredients go into making of this Idly / Dosa batter. Wash the Rice 2-3 times with water and soak in clear water for 2hrs. Simultaneously, wash Urad Dal and Menthya seeds and soak in water. THE RATIO IS – RICE 4:1 URAD DAL. One TeaSpoon of Menthya. Use of wet grinder is recommended.

Pour about 1.5 cups of water in the idli cooker and let it simmer over medium heat. Meanwhile, grease the idli plate molds with ½ tsp oil and then pour the idli batter inside the molds. Place the idli trays in the steamer and close the lid. Steam for about 12 minutes over medium heat and then turn it off.

Mix the fermented batter and check the consistency and if needed, add a tbsp or two of water. Add about 1 cup of water to the idli cooker and let it come to a boil. Meanwhile, grease the idli plates with gingelly oil and pour the idli batter. Steam it for 10 minutes over medium heat and turn off the heat.

After 4-5 hours of soaking, drain the excess water and grind the batter in a grinder. Remove the ground batter to a clean vessel. Let this sit for 6-8 hours and ferment well. Once fermented, refrigerate the batter. Remove only the amount needed to make idly/dosa. Add salt and gingely oil to it and make idly or dosa.

Grease or brush the idli moulds evenly with oil. Pour the batter in the moulds and steam the idli in a pressure cooker or steamer. If using pressure cooker remove the vent weight (whistle). Steam for 12 to 15 mins or until the idli is done. Serve the steaming hot idli with coconut chutney and sambar.

How to Make Idli & Dosa Batter: To prepare the batter, soak the rice in a bowl of cold water for 5-6 hours. In a separate bowl, add the whole skinless black lentils (urad dal) and fenugreek seeds and soak in cold water for 5-6 hours. Drain the water. Put the drained rice in a blender and slowly pour in 1 cup of cold water while blending.
